What inulin actually is
Chemically, inulin is a fructan — a chain of fructose units capped with a glucose, linked in a way that human digestive enzymes cannot break. Chicory root is the usual commercial source. The chains come in different lengths: shorter ones are often called fructo-oligosaccharides, or FOS, and longer ones are the classic inulin.
